Queen of the Night Kale Salad Recipe Secret

I was lucky enough a couple of weeks ago to check out the raunchy NYC show Queen of the Night. Not only did I get flogged for the first time in my life, but I also ate a delicious kale salad. Eager to get the recipe, I reached out to the team and the chef Jason Kallert. I hope you enjoy it as much as I did!

Kale Salad from Queen of the Night // Diamond Horseshoe
Shaved and raw; carrots, watermelon radish and red radishes, tossed in vinaigrette made with cornichons, roasted red peppers, shallots, oil and vinegar. 

Kale Salad Dressing:
Make 12 quarts Cambro

12 large shallots
125 cornichons
12 roasted peppers
14 tbsp. Dijon
6 cup red vinegar
12 cups blended oil 
6 cups Spoleto Extra Virgin Olive Oil 
6 tsp. fresh ground black pepper, paprika, garlic powder
8 tbsp. sugar
8 tbsp. salt

Put first set of ingredients on Food Processor and blend well
Drizzle in both oils at the same time with machine running
Add spices and sugar, test for seasoning

**Do not mix too much when blending**
